Celebrating Black History month at UAL
Exploring cultural heritage through the palate
A few weeks back we asked staff and students from the Black community to share their favourite dishes with us so that we can re-create and serve them throughout Black History Month. Food is a core part of any culture and is a great way to learn more about a culture’s history and background. Read on to find out what’s on offer this month and where you can enjoy it!

Who can we thank for submitting these dishes?
Bunmi Ekundayo – Jollof Rice with Stewed Chicken
Bunmi is a Communications Manager within Communications and Brand at UAL and she submitted her dish because “Jollof Rice is an iconic West African dish that has become extremely popular across the UK and beyond. Being of Nigerian descent it’s also a beloved dish from my heritage so I would like to take this opportunity to share it with our UAL community. Thank me later!”
Denise Lewis – Brown Stew Chicken
Denise is a Specialist Knit Technician at CSM. On her dish, she said “It was one of my favourite dishes my mother cooked when I was growing up. She didn’t use ready made browning sauce in her stew but instead used to brown sugar in the oil before adding the chicken, which always gave off a distinct aroma. If I smell it now it always immediately takes me back to my childhood.”
Jason Henry – Ackee and Jackfruit with Rice and Peas (Ve)
Jason works at LCC as a Digital Reprographics Specialist Technician. For him, it was important to submit a vegan dish as “It represents my culture and I also believe that UAL should be completely vegan and have consideration on the impact of their food on the environment.”
Savannah Robinson – Doubles, Buss Up Shut and Roti (Ve)
Savannah is a Journalism student at LCC and she wanted to share her dish because its “One of my favorite dishes although it is not apart of Bajan/Jamaican culture, we still regularly eat this dish.”
